The estate COS is made up of 3 old school friends - Giambattista Cilia, Cirino Strano, and Giusto Occhipinti (COS is an acronym of their surnames). They’re based in the South of Sicily, in a winemaking area known as Vittoria. Made from the grapes Grecanico and Insolia, with 7-10 days skin contact and fermented using indigenous yeasts before being aged in concrete for 9 months. Farmed organically.
