Dimitrios Kioutsoukis’s family always had a dream to make wine like their ancestors. Finally they saved up enough to fulfil their dreams and planted vineyards of native Greek varieties in 2010. “Stalisma” means a nice, relaxing break in the shade. This is made from 80% Malagousia, an aromatic white grape and 20% Xinomavro, a local red grape variety. The white grapes are left on their skins for 3 days, while the Xinomavro is directed pressed as a blanc de noirs. After fermentation the varieties are blended and aged together until spring, when it’s bottled without fining, filtration or added sulphur.
