Holly is a WSET diploma holding sommelier with a passion for all things vinous and boozy. Formerly assistant head sommelier at Noble Rot's Lambs Conduit street site, she's in charge of day to day operation and absolute fountain of wine knowledge.
Edwin's been in the beer game for well over a decade. With stints at Camden Town, London Fields, Sierra Nevada, Cloudwater and 40FT on his CV, he's a hugely well loved face in the UK beer scene and the man behind our beer selection at Half Cut Market.
Paul's is your go-to guy for all things food at Half Cut. Having cut his teeth in operations at Canteen & Marksman Public House, he's currently working with My Neighbours the Dumplings & Acme Fire Cult when he's not sourcing delicious things for us at the shop.
Danny has been working in and around the hospitality business ever since he left school. He founded Arnie, a creative and production agency working with booze brands in 2014 and is responsible for making sure that everything we do looks good.
